Title A name given to the resource Ukrainian-English Cook Book Description An account of the resource This cookbook was published by Winnipeg’s Ukrainian Book Store and Press, which no longer exists. The book shows an interesting mix of influences: the Ukrainian description on the title page translates to “Practical Advice and Explanation in the Ukrainian Language of English Cooking and Baking Techniques” and indicates that the book contains two sections: I: Old Country Home Cooking and II: Instructions for Health; but the cover image is of a rather generic housewife holding a French soup tureen. The recipes inside are written in Ukrainian except, curiously, for their titles, which are in English. An English influence is evident, for example, in the various “catsups” listed in one section. This book also follows the traditional household cookbook style in that, besides culinary recipes, it also includes a number of home remedies. These include how to staunch a bleeding nose or how to cure constipation, lockjaw (as tetanus is sometimes called) and sunstroke. A “felon,” a cure for which is included on page 196, is a small abscess, a remedy for which would have been important in the days before antibiotics were available. Her views, advocating unprocessed food and vitamin supplementation, were often controversial (Carstairs; McBean and Speckmann 1076). This textbook was written for high school students and recommended for the Alberta curriculum from 1946 to 1963. Its inscription—“16 Mar 50, Miss E. A. Hassie, g Ed”—suggests it was used by an education student. The contents reflect an obsession with vitamins, including the now-defunct vitamin P (citrin). The healthful properties of vitamins were first observed in the 1910s. By 1921, scientists had identified vitamins A, B, and C, and by 1940 they had a list of over forty; books, articles, and advertisements extolled their importance to readers (Apple 4). Industrial success, athletic prowess, and physical and social conformity (“healthiest people have the most fun”) are the ideals in this textbook. In addition to the “Touchdown for Wheat Germ” case study, the book recounts the (probably apocryphal) tale of Ellen B., who reversed the greying of her hair by taking B-complex vitamins. The introduction notes that most children brought a cold lunch to school and ate it haphazardly throughout the day. “The average noon luncheon tends to promote disorder, indigestion, and general discomfort. ... [A]t present the usual way of taking food is a real menace to the manners, health and morals of the children.” Providing a hot lunch item, however, would educate children in proper food preparation and consumption. Students would bring their lunches every day as usual, while the teacher would prepare a hot dish as a demonstration to the class; for the remainder of the week, rotating committees of children would prepare the item as a supplement to the students’ normal meals. “This,” the author enthused, “adds greatly to the digestibility of the lunch and to the nutritive value of the food. It also tends to make school a more interesting place and a greater agency for the socialization of the child. This means that the child’s body is more comfortable and in better condition to resist cold and disease.” Recommended dishes included cocoa, cream soups, mashed potatoes, creamed vegetables, creamed fish, and welsh or tomato rarebit. The marginalia, however, demonstrates Canadians’ frustration and stubbornness in adapting to the new measurements, and many Canadians continued to convert back to the old imperial system. The book’s appeal is clear: the illustrations are simple and attractive, while the descriptions include diverse recipes for preparations of edible shoots and leaves, roots, nuts, and fruits both in the bush and at home. Title A name given to the resource Blue Ribbon Cook Book Description An account of the resource The Blue Ribbon Company was established by George Frederick and John Galt in Winnipeg around 1897; the cousins had already established a wholesale grocery business in 1882 (Driver, Culinary 928). Though the copyright for this book was apparently entered in 1905, the actual date of issue for this edition was probably around 1936. Women might have distributed the tear-out coupons to their friends and neighbours, illustrating how the company tapped into an extant community and brought them together around a common product. As in many company cookbooks, this publication includes a section for women to add their own recipes, which they usually did in messy handwriting stocked with their own abbreviations. The book also includes a section on invalid cookery, commonplace in earlier household tomes. But while older recipe books might also include home remedies for serious illnesses, late-nineteenth- and twentieth-century publications usually deferred to doctors for such medicinal treatments. Still, their invalid cookery recipes reinforced women’s continued importance as healers through food. Title A name given to the resource Canadian Boy Scout Diary Description An account of the resource This 1935 diary features a cover portrait of Lord Baden-Powell, who founded the Boy Scouts in 1907 largely as a response to his experiences in the Boer War. Emphasizing wilderness survival, early scouting guides included tips on tracking, pathfinding, building shelters, and keeping oneself healthy. Proper and safe camp cooking was particularly stressed, as illustrated by the Scout Food Purity Tests for preventing food poisoning. This guide also reflects a fascination with anthropometrics, with spaces for height, weight, and measurement information. In addition to helping in uniform fitting, this information also served as a measure of health and fitness. Today, the Personal Fitness Merit Badge from the Boy Scouts of America requires arm, shoulder, chest, abdomen, and thigh measurements (Boy Scouts of America), and the Boy Scouts of America has come under criticism for instilling BMI standards for high-adventure activities (Garfinkle). This book also illustrates the Boy Scouts’ and Scouts Canada’s early connection to food companies. Scouts could order a free Klim recipe guide in the mail, for example. Similarly, the Kellogg Company produced A Manual of Cooking for Boy Scouts (c. 1949?) in the United States. It featured recipes for All-Bran muffins and pancakes, for example, as well as Rice Krispies brittle and other treats. While some recipes used conventional cups and tablespoon measurements, others also included a novel alternative in the form of “Handfuls” and “Fingers” (12). Although Scouts have a long tradition of camp cooking, this book contains household recipes, most likely provided by the boys’ mothers. In addition to generally predictable fare, the book includes a special section of international recipes (on blue rather than white paper). While most “ethnic” recipes were contributed by women who brought only dubious cultural experience (witness Mrs. P. Yurkiw, an unlikely expert on “Eggs-Fu-Yung”), the recipes for “Turkish Pilav” and “Turkish Shish Kebab” were in fact contributed by Kumran Senturk of Ankara. The recipe for “Chinese-Style Hotdogs” also speaks to widespread adaptation of the idea of Chinese cuisine: the recipe calls for sliced hot dog wieners cooked with pineapple, soy sauce, and sauerkraut—a true hybrid! It is inscribed with the name of Cliff Lewis, who lived at 1813-17th St SW in Calgary in the early 1970s (Henderson’s ... Calgary). Boy Scout groups were formed in Canada as early as 1907, and the Canadian General Council of the Boy Scout Association was incorporated by an Act of Parliament in 1914 (Scouts Canada). Camp cooking has always been a key component of scouting: a special Canadian edition of Lord Baden-Powell of Gilwell’s Scouting for Boys noted that “the three B’s of life in camp are the ability to cook bannocks, beans, and bacon” (120). Laid on the ground, a Scout’s coat was a fine surface for mixing bannock dough, according to Lord Baden-Powell, while other Scouting books illustrate the process of skinning a rabbit. By the 1970s, Scout cooking was a somewhat tamer affair, with suggestions for cooking desserts, potatoes, and meats, including “Tarzan Steak” placed right on the coals. This book also has a miniature food guide, based on Canada’s 1961 Food Guide, prescribing four or more servings of milk, four or more fruits and vegetables (with one citrus fruit daily and dark green or yellow vegetables), two or more servings of meat, and four of more servings of bread products per day. The series was retitled The Bride’s Book in 1928. It highlights forgotten food products like Hudson’s Bay Tea and suggests the novelty of electric cookers and dried pasta in the early decades of the twentieth century. Elizabeth Driver ventures that the recipes may have been taken from an American source (Culinary, 1082). Titles such as “Chicago Sponge Cake” seem to suggest as much, and the San Francisco Sunday Call for 16 June 1912 carried the same recipe. Advertisements in The Real Home Keeper also reveal concerns about germs and sanitation in this period: the Arctic Ice Company advertisement assures customers that its product is safe.
