Title A name given to the resource A Cook Book Containing Recipes Tested and Proven by the Ukrainian Ladies’ Good Will Organization and Friends Description An account of the resource This cookbook, published in four editions by the St. Josaphat’s Ladies’ Auxiliary, offers a glimpse into Edmonton’s Ukrainian community through the 1940s and early '50s (this edition, the third, is probably from 1954). It includes “An Appreciation,” which thanks recipe donors (whose names are also given after their culinary contributions) and advertisers; the book also lists individuals who made cash contributions. Among the advertisements, many of which endorsed Ukrainian-owned businesses, is a notice about welfare legislation, signalling a political priority of the period. While a Ukrainian audience was almost certainly intended for this book, the recipes also include, as Elizabeth Driver points out in Culinary Landmarks, dishes described as Czech, Slovakian, Hungarian, and Jewish (1031), probably the result of cultural comingling or intermarriage. But Ukrainian dishes remained an important part of ethnic identity (Zembrzycki 134–35). The “National Dishes” section includes a definition for “pyrohy”—surely the most popular of Ukrainian dishes in the Prairies—as “a sort of filled dumpling.” Meatless perogies were commonly eaten on Friday, a day of fasting for Ukrainian Catholics. This book also includes a section called “Ukrainian Christmas Eve Dinner” and includes recipes for each of that holiday’s twelve traditional meatless dishes. Ukrainian Christmas Eve, according to the Julian calendar, falls on January 6. Ukrainian women founded the first women’s society in Alberta, called Zoria; this group raised significant funds for the construction of St. Josaphat’s Cathedral in downtown Edmonton. In 1944, Ukrainian women united nationally to found the Ukrainian Catholic Women’s League of Canada, a group that still exists today (Ukrainian Catholic Eparchy) The social engagement of these women is clear in pencil notes about “A.M. Registration,” a “Raffel,” and “Visit of Sick,” for example, hastily written on the book’s back pastedown. In 2002, St. Josaphat’s Cathedral published another cookbook, in celebration of its centennial. Title A name given to the resource A Guide to Good Cooking Description An account of the resource Jean Brodie was a popular Toronto-based food writer in the 1930s, responsible for 100 Tested Recipes, produced for the Farmer’s Dairy in Toronto. She also edited a food column for the Toronto Star: as one early ad put it, “To further its qualities as a meeting ground for producer and consumer, The Star Weekly has taken pains to establish a cookery department second to none, in which Jean Brodie, advisor in matters culinary, provides cooking methods which link up food with tastes and are invaluable to both” (“Will the World”). The recipes in A Guide to Good Cooking were solicited from the community in a nationwide campaign, but unlike the earlier Five Roses Cook Book, contributors’ names and hometowns were stripped away and the recipes were cemented into the national culinary canon. Western Canada still took a central role, however, as Five Roses flour was advertised on the back cover as “The Pure Produce of Western Canadian Hard Spring Wheat.” A Guide to Good Cooking was also aimed at a more sophisticated audience than the earlier Five Roses book: gone was the string for hanging it on the kitchen wall, and the book contains recipes for elegant sandwiches and modern “Vitamin Salad.” Still, the wholesome tone was not totally lost: the editor admitted that “Princess Pudding” was “merely a new name” for a familiar kind of shortcake. This copy was particularly well used: some of the coupons, which could be distributed to friends and neighbours so that they could send for their own free copies of the book, are torn out. Title A name given to the resource A Little Cook-Book for a Little Girl Description An account of the resource Although this is an American cookbook, originating as a semi-literary series for Good Housekeeping, this particular copy belonged to Albertan Lilian Leversedge (1913–2001), perhaps the daughter of Anglican minister Walter Leversedge and his wife Kate Ramsey (Hills of Hope 121–27). Notably, the candy and dessert pages are well worn, while the recipe for broiled sardines is untouched. The handwritten recipe for maple fudge (containing no maple syrup, sugar, or extract) on the back page displays Leversedge’s juvenile hand, as well as the tendency for written-in recipes to be for desserts. The book includes early nods to prepared foods, including boxed gelatine and Baker’s brand chocolate, while “butter the size of a hickory nut” and “10 cents’ worth” of almonds might have meant little on the Canadian Prairies. Though the copyright for this book was apparently entered in 1905, the actual date of issue for this edition was probably around 1936. Women might have distributed the tear-out coupons to their friends and neighbours, illustrating how the company tapped into an extant community and brought them together around a common product. As in many company cookbooks, this publication includes a section for women to add their own recipes, which they usually did in messy handwriting stocked with their own abbreviations. The book also includes a section on invalid cookery, commonplace in earlier household tomes. But while older recipe books might also include home remedies for serious illnesses, late-nineteenth- and twentieth-century publications usually deferred to doctors for such medicinal treatments. Still, their invalid cookery recipes reinforced women’s continued importance as healers through food. Title A name given to the resource Bread Baking Made Easy Description An account of the resource Rita Martin was invented in 1938 as a corporate character for Robin Hood flour, which by the time of this book’s publication was milled in Calgary, Moose Jaw, Saskatoon, and Humberstone, Ontario. With a name equally pronounceable in English and French, Martin was one of the faces of Robin Hood until around 1970 (Cooke, “Getting” 209). Nathalie Cooke argues that such characters were crucial bridges between the product and the consumer, lending comfort to change and glamour to continuity. In the preface to Bread Baking Made Easy, the reader is told that “Robin Hood Flour is thoroughly dependable—it is tested hourly in our modernly equipped laboratories by fully qualified chemists who make certain the high dependable quality is uniform always” (qtd. in Cooke, “Getting” 201). The book’s images, however, are largely domestic, including the cover illustration of Rita Martin baking bread over the course of a day at home. Title A name given to the resource Bread Book Description An account of the resource As immigration to the Prairies exploded in the first decade of the twentieth century, railway companies like the CPR, CNR, and Grand Trunk Pacific competed to bring prospective farmers to Western Canada. This brochure, cleverly shaped like a breadbox, illustrates how the companies used food as a motive for immigration. Quick-maturing crops and new dryland farming techniques made agriculture more viable in the West, and food in the form of both crops and livestock was the farm’s key economic driver. The brochure boasted of yields as high as 124 bushels of oats per acre and 55 bushels of wheat per acre. On the domestic scale gardening also improved the farmer’s quality of life. The brochure’s evocative images of grain in the Prairie sun, the Swift Canadian plant alongside the Grand Trunk Pacific tracks, and root vegetables and strawberries harvested from “the great garden of the west” encouraged farmers to come to Alberta and Saskatchewan to nourish both their bodies and their bank accounts. Clearly targeting American, Canadian, and British citizens after the closing of the American frontier, the brochures are also subtly xenophobic: most of the testimonial writers have Anglo-Saxon names, and one even comments that “The settlers in this vicinity [Battle River, AB] are nearly all Canadians and Americans and a better class of farmers would be hard to find anywhere” (15). Description An account of the resource Buckskin Cookery was originally self-published by Gwen Lewis of Quesnel, British Columbia, in 1957. It consists of two volumes: “The Pioneer Section” and “The Hunter Section.” In reality these two groups overlapped greatly, as many pioneers would have acquired food by hunting. The University of Alberta Libraries has the fifth printing of Volume I, done by E.M.F. Press of Three Hills, Alberta, in June 1961, and perhaps a first printing of Volume II. Though based on life in the Fraser Valley, many of the book’s recipes and observations would have applied equally to the Prairie provinces. The recipes are simple, like “Vinegar Pie,” or use wild ingredients such as pigweed or coyote. Many of the recipes are essentially narrative, particularly those marked “Indian,” suggesting that Lewis interviewed locals and transcribed their recipes as they spoke. Indeed, Lewis’s book also points to the important overlap between native foodways and pioneer survival: rose hips provided crucial vitamin C, for example, and berries might be dried by the “Indian” method (in the sun, then stored in flour sacks) to last the winter. Pioneers modified their traditional jelly and preserves recipes to use these new ingredients. The Fort Chipewyan Historical Society’s book, Fort Chipewyan Traditional Cookery, similarly suggests interplay between indigenous and settler food traditions, as in the recipe for “Beaver and Sauerkraut.” Lewis’s hints on snowshoeing, preparing Russian plaster, and killing head lice, as well as the illustrations and anecdotes that introduce some of the recipes, bring the area’s rich history to life. Lewis also drew the advertisements for the book, which include an ad for Overwaitea, at the time a B.C.-owned and -operated business that had offered “Heap Good Medicine for Housewife” since 1915. The first edition was reprinted by the Quesnel & District Museum in 1995. Title A name given to the resource Canadian Boy Scout Diary Description An account of the resource This 1935 diary features a cover portrait of Lord Baden-Powell, who founded the Boy Scouts in 1907 largely as a response to his experiences in the Boer War. Emphasizing wilderness survival, early scouting guides included tips on tracking, pathfinding, building shelters, and keeping oneself healthy. Proper and safe camp cooking was particularly stressed, as illustrated by the Scout Food Purity Tests for preventing food poisoning. This guide also reflects a fascination with anthropometrics, with spaces for height, weight, and measurement information. In addition to helping in uniform fitting, this information also served as a measure of health and fitness. Today, the Personal Fitness Merit Badge from the Boy Scouts of America requires arm, shoulder, chest, abdomen, and thigh measurements (Boy Scouts of America), and the Boy Scouts of America has come under criticism for instilling BMI standards for high-adventure activities (Garfinkle). This book also illustrates the Boy Scouts’ and Scouts Canada’s early connection to food companies. Scouts could order a free Klim recipe guide in the mail, for example. Title A name given to the resource Canadian Cook Book Description An account of the resource Used as both a reference book and textbook in Alberta junior and senior high schools from 1940 to 1984 (“Alberta School”), the Canadian Cook Book, which started as a prescriptive textbook, eventually became a staple in Canadian households (Ferguson and Fraser). First published in 1923 by Nellie Pattinson, Director of Domestic Science at Toronto’s Central Technical School, it went into its twentieth printing in 1949; this copy is a third edition from 1925. Pattinson’s cookbook, the authority of which was confirmed by her affiliation with the school (Cooke, “Cookbooklets” 23), was a Canadian addition to the “rational school” of domestic science, which gained popularity with Fannie Farmer’s Boston Cooking-School Cook Book (1896). The rational school took a rigorous, orderly approach to cookery, with high standards for accurate measurements and instructions. Reflecting on the book in a 5 December 1942 article in Toronto’s Star Weekly, Jean Brodie noted that “The recipes for desserts and other sweet dishes call for less sugar than many American recipes—to suit the tastes of Canadians who do not like their foods as sweet or as rich as the folks who live ‘South of the border.’” Measurements used the Canadian 40-ounce (rather than 32-ounce) quarts, and flour was measured in keeping with Canadian milling practices (qtd. in Driver, “Cookbooks as Primary” 262). Even so, there are few dishes that we would recognize as distinctively Canadian among the recipes for “Boston Brown Bread,” “Kentucky Salad,” and “Chicken a la King.” There is a large section for invalid food, and another additional section for diabetic food, reinforcing the health emphasis of the text. After Pattinson’s death in 1953, the book was revised in several editions by Helen Wattie and Elinor Donaldson. It is inscribed with the name of Cliff Lewis, who lived at 1813-17th St SW in Calgary in the early 1970s (Henderson’s ... Calgary). Boy Scout groups were formed in Canada as early as 1907, and the Canadian General Council of the Boy Scout Association was incorporated by an Act of Parliament in 1914 (Scouts Canada). Camp cooking has always been a key component of scouting: a special Canadian edition of Lord Baden-Powell of Gilwell’s Scouting for Boys noted that “the three B’s of life in camp are the ability to cook bannocks, beans, and bacon” (120). Laid on the ground, a Scout’s coat was a fine surface for mixing bannock dough, according to Lord Baden-Powell, while other Scouting books illustrate the process of skinning a rabbit. By the 1970s, Scout cooking was a somewhat tamer affair, with suggestions for cooking desserts, potatoes, and meats, including “Tarzan Steak” placed right on the coals. This book also has a miniature food guide, based on Canada’s 1961 Food Guide, prescribing four or more servings of milk, four or more fruits and vegetables (with one citrus fruit daily and dark green or yellow vegetables), two or more servings of meat, and four of more servings of bread products per day.
