Title A name given to the resource The Quill Lake Homemakers' Club Cook Book Description An account of the resource This community cookbook hails from Quill Lake, east of Saskatoon. A number of community cookbooks in Saskatchewan were compiled by the Homemakers’ Clubs, which were established in that province in 1911 and raised money for hospitals, libraries, community halls, and similar social infrastructure. Though they shunned overtly political causes, such clubs allowed women the ability to participate in shaping their communities; in 1916, they would be permitted to vote in Alberta, Saskatchewan, and Manitoba. Elizabeth Driver notes in Culinary Landmarks that the Quill Lake club, which was established in 1914, disbanded in 1971 (1027). As its subheading suggests, this book offers a collection of recipes reflecting mixed cultural influences. Included are Mrs. W.H. King’s “Raisin Dumplings,” Mrs. Axel Olson’s “Julekake,” along with Mrs. Annie Zeebin’s “Holopski” and an unattributed “Conserves de Poisson” in French (with errors). At the same time, it incorporates recipes from as far away as Los Angeles and Louisiana, demonstrating American publishers’ strong influence on the Canadian cooking scene. The book also contains recipes for a number of poetically named cakes: “Windblown Cake,” “Sunshine Cake,” “Daffodil Cake,” and “Featherweight Cake” (the first three resemble angel food cakes), as well as Mrs. Harry Brown’s “Wonder Pickle” (which contains red and green peppers besides cucumbers and onions). It was evidently a carefully used book, as it contains many handwritten corrections by an alert and skilled cook and baker. Community cookbooks were often partially funded by advertising. Alongside those for flour, other household products, and beauty shops, this book contains ads for automobile and tractor dealerships, lumber companies, and agricultural fertilizers, as well as local insurance companies, dentists, shops, cafes, and theatres. Perhaps these suggest a broader readership; more likely, they are signs of community support and sponsorship, as well as women’s influence in decision-making for family purchases. The series was retitled The Bride’s Book in 1928. It highlights forgotten food products like Hudson’s Bay Tea and suggests the novelty of electric cookers and dried pasta in the early decades of the twentieth century. Elizabeth Driver ventures that the recipes may have been taken from an American source (Culinary, 1082). Titles such as “Chicago Sponge Cake” seem to suggest as much, and the San Francisco Sunday Call for 16 June 1912 carried the same recipe. Advertisements in The Real Home Keeper also reveal concerns about germs and sanitation in this period: the Arctic Ice Company advertisement assures customers that its product is safe. Title A name given to the resource The Royal Alexandra Cook Book Description An account of the resource Edmonton’s Ladies Hospital Aid, founded in 1898, paid the initial $8000 cost of opening the 25-bed Edmonton Public Hospital in 1900 (Infofile). The cornerstone was laid in 1910 for a replacement hospital, which opened in 1912. This new building, featured on the cover page, was constructed in the English Revival Style and designed by Edmonton architect Roland Lines (Herzog). It was named for Alexandra, the wife of Edward VII. Cookbooks have been a consistent fundraiser for the Ladies Aid (later renamed the Auxiliary): they produced the Royal Alexandra Book of Household Science around 1928 and another fundraising book in 1989–90. The recipes in this 1912 book are extremely compact: perhaps the editors tried to save space in order to include recipes from as many contributors as possible, or maybe they assumed an experienced readership, knowledgeable in the processes of Prairie cookery. This book also picked up extra revenue through advertisements, including what appears to be embedded advertising for Capital Flour, perhaps a product of the Regina-based Capital Flour and Feed. Hynd Litho-Print Ltd. of Calgary (1043–44). P. Burns and Co. was established by Patrick Burns in Calgary in 1890, soon expanding to Edmonton and Vancouver as well. After the scandal of Upton Sinclair’s meat-packing exposé The Jungle (1906), this small cookbook emphasized the nutritional and sanitary quality of the Burns plants, particularly the “mammoth Calgary Packing-house,” open for inspection by consumers’ leagues and domestic science classes. It also points out that “The utmost care is taken in making our sausage—the kitchen is a model of cleanliness—all meat is Government Inspected meat.” Burns also ran a chain of retail stores, selling the Shamrock prestige brand, which encompassed meat, lard, butter, and eggs; Glendale Brand Fancy Creamery Butter; and Dominion brand, a lower-priced alternative. The recipe for “Escalloped Salmon” indicates that Burns also sold fish. While many of the recipes emphasize pork, Burns and Co. also declared that “The good red beef of Alberta—first cousin to ‘the Rare Roast Beef of Old England,’ is, after all, our great specialty.” This book followed traditional household manuals by including pithy and edifying quotes running across the top of the page. Another World War I-era Shamrock Cook Book featured two Irish characters, the tall and thin Shamrock, and short and stout Weaney (Driver, “Canadian Cookbooks” 34).
