Title A name given to the resource The Shamrock Cook Book Description An account of the resource Printed by the Calgary-based Western Printing & Lithographing Co., this particular edition is not included in Elizabeth Driver’s Culinary Landmarks; other 1915 editions were printed by S.A. Hynd Litho-Print Ltd. of Calgary (1043–44). P. Burns and Co. was established by Patrick Burns in Calgary in 1890, soon expanding to Edmonton and Vancouver as well. After the scandal of Upton Sinclair’s meat-packing exposé The Jungle (1906), this small cookbook emphasized the nutritional and sanitary quality of the Burns plants, particularly the “mammoth Calgary Packing-house,” open for inspection by consumers’ leagues and domestic science classes. It also points out that “The utmost care is taken in making our sausage—the kitchen is a model of cleanliness—all meat is Government Inspected meat.” Burns also ran a chain of retail stores, selling the Shamrock prestige brand, which encompassed meat, lard, butter, and eggs; Glendale Brand Fancy Creamery Butter; and Dominion brand, a lower-priced alternative. The recipe for “Escalloped Salmon” indicates that Burns also sold fish. While many of the recipes emphasize pork, Burns and Co. also declared that “The good red beef of Alberta—first cousin to ‘the Rare Roast Beef of Old England,’ is, after all, our great specialty.” This book followed traditional household manuals by including pithy and edifying quotes running across the top of the page. Another World War I-era Shamrock Cook Book featured two Irish characters, the tall and thin Shamrock, and short and stout Weaney (Driver, “Canadian Cookbooks” 34). Title A name given to the resource The Vasa Book of Favourite Recipes Description An account of the resource Scandinavians settled across the Prairies. The Vasa Order, named after the first king of modern Sweden, formed in the late 1890s in Connecticut with the goal of preserving Swedish culture; eventually the organization expanded its scope to include members of any Scandinavian heritage. Five lodges were established in Alberta in the 1920s and '30s, including the Calgary branch (1925), which published The Vasa Book of Favourite Recipes. According to Thelma Spielman, a member of the Calgary Branting Lodge for over fifty years, the decision to publish this book was made at the Ladies Auxiliary meeting on 2 March 1956. One thousand copies were ordered, and they sold for $1.25 each. This book begins with a “Table of Contents” of advertisers; one of these is “Calgary Ginger Ale” from the Calgary Brewing & Malting Co. Limited, Alberta’s first brewery. Opened in 1893, the company introduced a line of soft drinks in order to stay in operation during Prohibition (“Calgary Malting”). Although this book includes recipes for “Scotch Bars,” “Spanish Meat Balls,” “Goulash,” and “Pow-wow Sandwiches” (made with bacon, dried beef, chili sauce, sweet-pickle relish and American cheese), most of the recipes are Scandinavian. The handwritten note next to a recipe for “Pepparkakor” indicates it was “Like Grandma Kranenberg used to make.” Icelandic settlers also adapted their recipes to the available ingredients of Western Canada. In the late 1880s, an Icelandic community developed around Markerville, east of Red Deer. The settlers made use of fish from the Medicine River and Sylvan Lake, and by 1900 they had established a creamery to make butter and cheese (Stephan G. Stephansson Icelandic Society). One of the settlers was Stephan G. Stephansson, whom Iceland named poet laureate in 1917. Cultural food traditions were important to the settlers and remain so today: the recipe for “Laufabrauth” (Leaf Bread) in Recipes from Pioneer Days, a pamphlet published in the past decade by the Stephan G. Stephansson Icelandic Society, comments that it is great “Great to have children help with this part” (cutting snowflake designs into each round), suggesting the importance of passing these traditions to the next generation. Title A name given to the resource The Way to a Man’s Heart Cook Book: A Collection of Recipes of Real Merit Description An account of the resource Featuring a plethora of brand-name foods, this cookbook is a snapshot of 1936 cookery. Recipes call for Eagle Brand or Borden’s condensed milk, Knox gelatin, Keen’s mustard, Sunkist oranges, Heinz ketchup and other sauces, Swans Down flour, Miracle yeast, Jell-O, Crisco, and Gillespie Maid, a local cereal produced by the Gillespie Grain Company from the 1920s to perhaps the late 1940s (Glenbow, “Oddments”). Food colouring was another novelty, recommend to dye the fruit in “Blushing Pear Salad,” for example. Another notable recipe is an inexpensive “Half-Pay Pudding,” and the book also includes a “Cocktails” page without alcohol. The advertisement for buying spices at the drug store illustrates a still-common practice in this period, and the book also includes an endorsement from a home economist encouraging the use of gas cooking in the home. Although Edmonton had natural gas as early as the 1920s (Atco Gas), the service was still relatively untried in this period. The Rebekah Lodge, which now admits both sexes, originated as the female auxiliary to the Independent Order of Odd Fellows, allowing women to participate in the social and service components of the organization. In keeping with this service mandate, the book opens with a “Recipe for a Happy Day”: Take a little dash of cold water, A little leaven of prayer, A little bit of sunshine gold, Dissolved in morning air. Add to your meal some merriment, Add thought for kith and kin, And then as a prime ingredient Aplenty of work thrown in. Flavor it with the essence of love, And a little dash of play; Let the dear old Book, and a glance above Complete the well spent day. The title page also implies that good cooking is “The Way to a Man’s Heart.” Such additions and folk humour were common in community cookbooks, and would carry on in more recent publications like the Best of Bridge series from Calgary.
