Even the promising-sounding Recettes des Femmes de St. Joseph, from a francophone community in Manitoba, contains recipes written entirely in English. Although most recipes were contributed by women with French names—Mrs. Annette Lavallee, Mrs. Rene Perron, Mrs. Elouise Delorme, for example—none are traditionally French-Canadian. By contrast, the collection includes “Chinese-Fried Rice,” “Chop Suey,” and “Chili con Carne.” The section on “Supper Quantity Cooking,” moreover, which reflects the role of homemade food at community and church gatherings, does not contain any particularly French-Canadian dishes. Interestingly, rather than use a local printer, the group elected to have their book published by the Women’s Clubs Publishing Co. in Chicago, which would also publish books from Wesleyville, Newfoundland and Elmira, Ontario, as well as communities across the United States. The notion of sending a local manuscript to such community cookbook businesses began in the 1950s; other companies offering this service included North American Press (in Kansas City) and L. Rasmussen Co. (in Winnipeg) (Driver, “Home Cooks” 58). The fact that this book was published in the U.S. by an English-language publisher may explain the absence of accents in the women’s names. With the scientific aspect already well established, “Home Economics” may have suggested a more business-like approach to domestic life and an expansion beyond nutritional facts to include social information as well. The inscription indicates that the book belonged to Agnes Janzen, probably a Saskatchewan high school student. This textbook also reflects the well-established partnership of cookery and sewing in home economics classes: students are instructed in making an appropriate uniform for their class, including a towel, potholder, and floppy chef’s hat. The recipes take a clearly pedagogical approach, beginning with simple beverages and advancing to more complex dishes. In keeping with late-nineteenth– and early twentieth-century household science’s advances in deconstructing work patterns, this book breaks cooking and dishwashing, for example, into a list of instructions to be followed. The marginalia, however, demonstrates Canadians’ frustration and stubbornness in adapting to the new measurements, and many Canadians continued to convert back to the old imperial system. The Metric Commission, set up to facilitate conversion to metric, was abolished in 1985 (“Population Affiliation Report”), and today most Canadian cookbooks use a hybrid of imperial and metric. Interned Japanese Canadians and German prisoners of war helped harvest the beets during World War II (Glenbow, “Alberta”), while First Nations peoples also contributed substantially to the workforce (Laliberte). Refineries for cane sugar in Vancouver and for sugar beets in Winnipeg and Southern Alberta employed hundreds. Although the B.C. Sugar Refinery Co. purchased the Manitoba Sugar Company in 1955, as well as the Alberta Sugar Company (Canadian Sugar Institute), the company produced separate cookbooks for each province. The recipes are essentially identical, but the calendars tracking the availability of different fruits and vegetables show subtle differences in the growing seasons. The book was meant as a home economics text, with recipes selected by a committee of home economics teachers. Many utility companies had home service departments to encourage women to be more comfortable using the “Magic Servant,” electricity. This book follows the not-uncommon practice of acknowledging the real figures behind companies’ public personas, balancing consistency of character with the authority of the real home-service educator. The “Low Calorie” dressing recipe reflects a trend of the period, while the electrical appliances advertised throughout illustrate electricity’s potential uses to the reluctant housewife (or perhaps her reluctant husband). Though this book is undated, several copies selling online are dated 1953; this book is likely from that period.
