<p>Elizabeth Driver has argued, with respect to francophone cookbooks, that “Before the Quiet Revolution in Quebec in the 1960s, the influence of the Catholic Church permeated French society and entrenched the traditional subservience of women. Church authorities … required that published materials emanating from the church be submitted for their approval”; moreover, she suggests that “Catholic women placed more emphasis on spiritual concerns than on fund-raising projects, and for economic reasons were less able to contribute financially to causes” (“Cookbooks as Primary” 274 note 35). While this may be true in the context of French Canada, Ukrainian Catholic cookbooks were a different story. This book received a special inscription of “Best wishes from Basilian Fathers,” and the Committee’s enthusiastic “Appreciation” illustrates their energy and initiative. </p>
<p>The recipes illustrate the book’s rich cultural situation. “Mock Strawberries” sit alongside traditional recipes for “Grandpa Boris Cabbage” and dill pickles (one of which is marked “I make these”). The book’s owner was a Mrs. Anderson, an indication that Ukrainian recipes were not always limited to exclusively Ukrainian households. Although fruitcake was common across many cultural groups, these recipes show the influence of more diverse ingredients, including canned pineapple. The book was well used, with Ukrainian newspaper recipes pasted in, for example. The endpages also include a handwritten “Laura Lindsay Recipe” (see <em>Laura’s Recipes</em>).</p>

Swift's Meats for Babies Grow Chart
Description
An account of the resource
This chart is part of a Swift Canadian campaign, beginning in the late 1940s, that encouraged “Meats for Babies.” Although Swift’s Canadian headquarters were in Ontario, this pre-cooked and strained food, sold in small cans, might have been produced at the Edmonton packing plant. Advertisements emphasized the food’s complete protein content and high nutritive value, including vitamin B, minerals, and iron, and indicated that it might be given to babies as young as three weeks (Swift Canadian Co., “Mothers!” and Swift, “Protein for Baby”). The practice of adding pureed meats to infant formula speaks to breastfeeding’s decline in this period, as mothers were taught to defer to the scientific authority of physicians and manufacturers (see Nathoo and Ostrey). Amy Bentley’s “Feeding Baby, Teaching Mother” explores this shift in infant feeding in the United States between the 1930s and the 1950s, observing how mass-marketed baby foods changed the prevailing wisdom about infant nutrition and encouraged the ever-earlier inclusion of manufactured solid food products. This growth chart was apparently used for a little over two years.

Your Farm Has a War Job

While food was always a key driver of Western Canada’s economy, the war meant that Prairie production had global consequences. This brochure, published by the North-West Line Elevators Association, encourages farmers to tailor their production to shifting British and Allied needs. “‘Farming as usual’, in Canada, is out for the duration” it proclaimed, and “it is hoped by the first of next year, the Government may be able to announce what acreages should be devoted to various crops in 1943.” By 1942, wheat production had already strategically decreased in favour of pork, eggs, and dairy products, but Canada’s flax production, crucial for the manufacture of linseed oil for camouflage paint, was still below demand. With a foreword by Minister of Agriculture James G. Gardinar, this book illustrates farmers’ and companies’ substantial redirection toward the war effort. Indeed, the war was all-encompassing: Pickersgill, whose brother was Mackenzie King’s executive assistant from 1937 to 1948, was soon asked to be Commissioner of Japanese Placement, a position he accepted with great reluctance (Sunahara 118).

<p>Another example of a wartime cookbook, <em>Cook to Win</em> was produced by the Good Cheer Club of Wesley United Church in Calgary. The cover shows a housewife focusing on key cooking goals, not unlike a military strategist. The foreword appeals to Prairie women’s resourcefulness, noting that “The pioneer spirit that is your Western inheritance will see your families well nourished and happy no matter what the future holds.” Encouraging wartime aphorisms, such as “Saving bones is a terrible chore, but better than the War at your door,” run along the bottom of the pages. Many of the recipes are “stretchers,” blending meat with breadcrumbs, potatoes, or other extenders, and some dessert recipes replace rationed butter with shortening, while others call for corn syrup or saccharin instead of sugar. Saccharin, first invented in the late nineteenth century but called into regular service as a household sweetener during the wars, was banned in Canada in 1977, after scientists discovered a link to bladder cancer (Canwest). Soyhart, also mentioned in this book, is a soy-based spread used as a substitute for peanut butter (“The Doctor’s Voice”). <em>Cook to Win</em> includes recipes from Princess Alice and Nellie McClung, as well as the wife of Conservative leader John Bracken.</p>
