Title A name given to the resource A Cook Book Containing Recipes Tested and Proven by the Ukrainian Ladies’ Good Will Organization and Friends Description An account of the resource This cookbook, published in four editions by the St. Josaphat’s Ladies’ Auxiliary, offers a glimpse into Edmonton’s Ukrainian community through the 1940s and early '50s (this edition, the third, is probably from 1954). It includes “An Appreciation,” which thanks recipe donors (whose names are also given after their culinary contributions) and advertisers; the book also lists individuals who made cash contributions. Among the advertisements, many of which endorsed Ukrainian-owned businesses, is a notice about welfare legislation, signalling a political priority of the period. While a Ukrainian audience was almost certainly intended for this book, the recipes also include, as Elizabeth Driver points out in Culinary Landmarks, dishes described as Czech, Slovakian, Hungarian, and Jewish (1031), probably the result of cultural comingling or intermarriage. But Ukrainian dishes remained an important part of ethnic identity (Zembrzycki 134–35). The “National Dishes” section includes a definition for “pyrohy”—surely the most popular of Ukrainian dishes in the Prairies—as “a sort of filled dumpling.” Meatless perogies were commonly eaten on Friday, a day of fasting for Ukrainian Catholics. This book also includes a section called “Ukrainian Christmas Eve Dinner” and includes recipes for each of that holiday’s twelve traditional meatless dishes. Ukrainian Christmas Eve, according to the Julian calendar, falls on January 6. Ukrainian women founded the first women’s society in Alberta, called Zoria; this group raised significant funds for the construction of St. Josaphat’s Cathedral in downtown Edmonton. In 1944, Ukrainian women united nationally to found the Ukrainian Catholic Women’s League of Canada, a group that still exists today (Ukrainian Catholic Eparchy) The social engagement of these women is clear in pencil notes about “A.M. Registration,” a “Raffel,” and “Visit of Sick,” for example, hastily written on the book’s back pastedown. In 2002, St. Josaphat’s Cathedral published another cookbook, in celebration of its centennial. Stereographs seen through the <a href="https://www.youtube.com/watch?v=Icbe2WSfw_Q" target="_blank" rel="noopener">stereoscope</a> offered such a convincing illusion of three-dimensional reality that some commentators, like the American doctor Oliver Wendell Holmes, suggested that “form is henceforth divorced from matter.” In his article entitled “<a href="https://www.theatlantic.com/magazine/archive/1859/06/the-stereoscope-and-the-stereograph/303361/" target="_blank" rel="noopener">The Stereoscope and the Stereograph</a>,” published in 1859, he went on to explain that “matter as a visible object is of no great use any longer, except as the mould on which form is shaped. Give us a few negatives of a thing worth seeing taken from different points of view, and that is all we want of it.”  This series of stereocards portraying the South African War, also known as the Boer War, informed viewers of world events while also offering a visual spectacle. These stereographs can be compared to other examples of war photography created earlier, like <a href="https://www.loc.gov/pictures/collection/ftncnw/" target="_blank" rel="noopener">Roger Fenton’s photographs of the Crimean War</a> from 1855, and later, during the <a href="https://omeka.library.ualberta.ca/exhibits/show/photograpies/item/3130">world wars of the twentieth century</a> or the <a href="https://omeka.library.ualberta.ca/exhibits/show/photograpies/item/3164">fight against apartheid</a> in South Africa. Title A name given to the resource United Farm Women of Alberta Cook Book Description An account of the resource The UFWA was created in 1915 as a women’s parallel to the United Farmers of Alberta. Nanci Langford’s Politics, Pitchforks and Pickle Jars notes that the first UFWA cookbook was produced in 1928 from recipes donated by members from across the province (xiv); with eight subsequent editions and many more printings, the book eventually sold over 125,000 copies (Driver, Culinary 1055-56). The foreword, by Mrs. Vera MacDonald of the Department of Agriculture’s Extension program, was new to this revised fifth edition. It refers to the housewife as an “artist, for the result of her work is a symphony of life in which all parts of her body, furnished with the foods needed for their functions, play together to produce the harmonious crescendo of ‘an abundant life.’” MacDonald also declares that “For the symphony of ‘Healthful Eating’ learn Canada’s Food Rules and, using them as a guide, serve well balanced meals every day.” This book is notable for including recipes from a variety of ethnic groups; it also contains multiple recipes for date squares, listed under such varied names as “Health Food” and “Matrimonial Cake.” Another noteworthy recipe is “Mock Chicken Salad,” made with diced cooked pork, readily available on Alberta farms.
