Title A name given to the resource Victory Cook Book Description An account of the resource A recurring theme in wartime community cookbooks is the kitchen as home front. An ad for Eaton’s specifically celebrates “Soldiers of the Kitchen Front,” the women whose knowledge of nutrition and food preparation would help them nourish their families and keep up morale, while also conserving vital foods to support the soldiers’ victory overseas. Other advertisements, such as that for McGavin’s bread, instructed housewives on the fundamentals of nutrition. The company used Canada’s first Official Food Rules as a guide; these rules emerged in July 1942 as a response to the perceived need to maintain health during the strictures of wartime rationing (see Mosby). “Canada Approved” bread, available since 1942 and specifically endorsed in Canada’s Food Rules, refers to flour that is milled in such a way as to retain B vitamins (“Canada Approved Bread”). While the United States and Britain encouraged fortification of foods, the federal government’s Nutrition Services Division and the Canadian Council on Nutrition instead advocated for this alternative milling technique (Mosby 421). Vitamins are a recurring concern in the book, which exhorts the consumption of pork for its vitamin B content and notes the importance of “vitamin G,” now known as riboflavin. The book also gives instructions for how to clarify and deflavourize fat and use animal fats in place of butter or shortening, as well as advice for “stretching” small quantities of meat. It also includes a recipe for a “Supper Dish” from Mrs. A.P. McNab, the Lieutenant Governor’s wife. Collotypes provided a way to print photographs within the pages of books alongside text, instead of pasting in individual photographs, but it was a laborious and expensive process. The photographs collected in Views of Portree provide a souvenir of this place and contribute to the “<a href="https://omeka.library.ualberta.ca/exhibits/show/photograpies/memory-and-identity">imagined geographies</a>” of Portree—much like the album <a href="https://omeka.library.ualberta.ca/exhibits/show/photograpies/item/3056">CPR 1887</a> contributes to the imagined geography of Canada. Title A name given to the resource Vitality through Planned Nutrition Description An account of the resource Adelle Davis was a notable American nutritionist and author of seven books on diet and nutrition. Her views, advocating unprocessed food and vitamin supplementation, were often controversial (Carstairs; McBean and Speckmann 1076). This textbook was written for high school students and recommended for the Alberta curriculum from 1946 to 1963. Its inscription—“16 Mar 50, Miss E. A. Hassie, g Ed”—suggests it was used by an education student. The contents reflect an obsession with vitamins, including the now-defunct vitamin P (citrin). The healthful properties of vitamins were first observed in the 1910s. By 1921, scientists had identified vitamins A, B, and C, and by 1940 they had a list of over forty; books, articles, and advertisements extolled their importance to readers (Apple 4). Industrial success, athletic prowess, and physical and social conformity (“healthiest people have the most fun”) are the ideals in this textbook. In addition to the “Touchdown for Wheat Germ” case study, the book recounts the (probably apocryphal) tale of Ellen B., who reversed the greying of her hair by taking B-complex vitamins. Title A name given to the resource Wanted Description An account of the resource This poster points toward the disciplinary use of photography described by art historian John Tagg in his book <a href="https://www.photopedagogy.com/john-tagg.html" target="_blank" rel="noopener">The Burden of Representation</a>. Tagg observes that photographic technologies led to a "democracy of the image" in the latter half of the nineteenth century, with many more people represented in portraits than ever before. But Tagg explains that such portraits were not always honorific; sometimes portraits were a burden to their subjects, especially when the photographs were used to fix identities in pre-established categories. Such was the case with this poster, which identifies its subject, James Harry Finn, as a criminal.
