Cooking the Co-op Way

<p>The British Women’s Co-operative Guild was first founded in 1883, and it became a model for the retail co-operatives that were founded across the Prairie provinces in the early twentieth century. These retail co-ops joined to form provincial wholesale co-operatives in 1928, which eventually merged to form the Federated Co-operatives Limited, which still have stores across rural Western Canada. The preface to this cookbook notes that “While the guilds from other countries are mostly connected with the consumer movement, Canadian guildswomen, particularly on the Prairies, are interested and active in all phases of the co-operative movement—marketing, consumer, financial, and service.” In keeping with this active spirit, the Co-operative Women’s Guild of Outlook, Saskatchewan, compiled the first Saskatchewan Co-op Cookbook in 1946. It was revised by popular request in 1952 and underwent five reprints. The Manitoba Women’s Co-operative Guild similarly selected a cookbook for its first major project. It too, was successful, and <em>Cooking the Co-op Way</em> was compiled from these earlier books, “using many of the recipes which are family treasures and adding many different ones, in the hope that it will be of even more assistance to the modern homemaker.” In addition to generic North American classics like “Lemon Chiffon Pie,” “Ham Steaks,” “Celery Pinwheels,” and “Potato Salad,” this book follows a trend from the period in including “Foods from other Lands” (albeit heavily Westernized and even bowdlerized), which might tempt the bored family cook. This was a process of “mainstreaming the foreign foods until they were no longer considered dangerously foreign yet still retained enough of the exotic to make experimenting with them worthwhile” (Iacovetta, Korinek, and Epp 20–21). The cookbook also includes basic nutritional information, table service tips, weights and measures, and substitutions in the case of missing ingredients. Tucked between the pages is a newspaper clipping with various desserts recipes, as well as another for “Chewy Raisin Squares”; these speak to the cookbook’s place as a go-to kitchen reference, and to the tenacity of these ephemeral articles.</p>

<p><span style="font-weight: 400;">This album (labelled on the cover "<em>Anatomische Abbildungen der Biene</em>") from 1875 captures some of the reasons why early photography was more effective at </span><i><span style="font-weight: 400;">producing </span></i><span style="font-weight: 400;">knowledge than </span><i><span style="font-weight: 400;">circulating </span></i><span style="font-weight: 400;">knowledge. Here, photographs, drawings, and text mingle together on the page. The album’s compiler was interested in using the most effective combinations to record and convey information, and photography was not always the best choice.<br /><br />Created with </span><a href="https://www.youtube.com/watch?v=hnxT4WQsLLM" target="_blank" rel="noopener">wet plates</a><span style="font-weight: 400;"> and printed on </span><a href="https://www.youtube.com/watch?v=ObveSq3cMkw" target="_blank" rel="noopener">albumen paper</a><span style="font-weight: 400;">, the photographs are pasted into the album and then combined with additional markings that make each page unique. Consider similarities and differences between this album and Charles </span><span style="font-weight: 400;">Darwin’s </span><a href="https://omeka.library.ualberta.ca/exhibits/show/photograpies/item/3145"><i><span style="font-weight: 400;">Expression of the Emotions in Man and Animals</span></i></a><span style="font-weight: 400;">,</span><span style="font-weight: 400;"> which also used photography as a means of producing knowledge. </span></p>
<p><span style="font-weight: 400;">One of the unique features of this album is its </span>photomicrographs<span style="font-weight: 400;">. Even though these photographs may not have circulated widely, the idea of capturing the view through the microscope photographically was considered an important breakthrough and offered advantages over the practice of recording microscopic views by hand, as seen in the example of </span><a href="https://omeka.library.ualberta.ca/exhibits/show/photograpies/item/3030"><em>Miscellaneous Objects as Seen With and Without the Microscope</em></a>.</p>
<span style="font-weight: 400;">Some of the earliest </span>photomicrographs<span style="font-weight: 400;"> were made in 1840, using the </span><a href="https://omeka.library.ualberta.ca/exhibits/show/photograpies/item/3125">daguerreotype process</a><span style="font-weight: 400;">. The scientists responsible for the images, Alfred Donné and Léon Foucault, published reproductions of their </span>daguerreotypes<span style="font-weight: 400;"> as </span>engravings<span style="font-weight: 400;"> in </span><a href="https://wellcomelibrary.org/item/b30455248#?c=0&m=0&s=0&cv=0&z=-0.2291%2C-0.0874%2C1.4581%2C1.747" target="_blank" rel="noopener"><i><span style="font-weight: 400;">Cours de microscopie complémentaire des études médicales</span></i></a><span style="font-weight: 400;"> in 1844, and in an accompanying atlas in 1845. </span>

Golden City Restaurant Menu

Many Chinese immigrants came to Canada to work on the railway, but after these jobs ended, they were prohibited from entering or training for many professions. Many turned to restaurants to make a living. The earliest Chinese restaurant menus consisted almost entirely of Western food, but gradually the ratios reversed, and by mid-century many restaurants focused primarily on Chinese dishes. Still, they usually appealed to Western tastes. The Golden City Restaurant, located in the heart of old Chinatown in Edmonton, is one example. Dating from perhaps the 1960s, the menu is structured to appeal to Western ideas of Chinese (in this case, Cantonese) food. Varieties of “Chop Suey” and “Chow Mein” are near the beginning of the menu, followed closely by “Egg Fuyung” and “Wuntun.” The latter is described using the Western point of reference—“Ravioli in Chinese Style.” “Gravy,” similarly, probably refers to a cornstarch mixture used to hold flavours together. Following the Western custom, soup is at the beginning of the menu, and the many tomato dishes, extremely unusual in Cantonese cooking, also tempt Western palates. Seafood, relatively unpopular on the Prairies, is left to the end of the menu. The section includes an abalone dish (a delicacy in Chinese cooking), as well as “Steamed Live Deep Sea Crab,” a dish most likely to be ordered by Chinese diners.

As immigration to the Prairies exploded in the first decade of the twentieth century, railway companies like the CPR, CNR, and Grand Trunk Pacific competed to bring prospective farmers to Western Canada. This brochure, cleverly shaped like a breadbox, illustrates how the companies used food as a motive for immigration. Quick-maturing crops and new dryland farming techniques made agriculture more viable in the West, and food in the form of both crops and livestock was the farm’s key economic driver. The brochure boasted of yields as high as 124 bushels of oats per acre and 55 bushels of wheat per acre. On the domestic scale gardening also improved the farmer’s quality of life. The brochure’s evocative images of grain in the Prairie sun, the Swift Canadian plant alongside the Grand Trunk Pacific tracks, and root vegetables and strawberries harvested from “the great garden of the west” encouraged farmers to come to Alberta and Saskatchewan to nourish both their bodies and their bank accounts. Clearly targeting American, Canadian, and British citizens after the closing of the American frontier, the brochures are also subtly xenophobic: most of the testimonial writers have Anglo-Saxon names, and one even comments that “The settlers in this vicinity [Battle River, AB] are nearly all Canadians and Americans and a better class of farmers would be hard to find anywhere” (15).

5 x 15" plus a strip of 29 photographs. The book has been attributed as the catalogue for Larry Bell's show at the Fort Worth Museum. It has no words, only photos mounted tight on each page without any borders. Each photo probably represents a letter, space, period or comma, with the strip of 29 photographs being the code. The photos are of Larry Bell's 1969 sculptures, and were taken with a fish-eye lens. The code and layout were by De Cointet. Signed by both artists.

Buckskin Cookery: A Souvenir Cookbook Compiled of Recipes Donated by Old Timers and Natives of B.C.
Description
An account of the resource
<em>Buckskin Cookery</em> was originally self-published by Gwen Lewis of Quesnel, British Columbia, in 1957. It consists of two volumes: “The Pioneer Section” and “The Hunter Section.” In reality these two groups overlapped greatly, as many pioneers would have acquired food by hunting. The University of Alberta Libraries has the fifth printing of Volume I, done by E.M.F. Press of Three Hills, Alberta, in June 1961, and perhaps a first printing of Volume II. Though based on life in the Fraser Valley, many of the book’s recipes and observations would have applied equally to the Prairie provinces. The recipes are simple, like “Vinegar Pie,” or use wild ingredients such as pigweed or coyote. Many of the recipes are essentially narrative, particularly those marked “Indian,” suggesting that Lewis interviewed locals and transcribed their recipes as they spoke. Indeed, Lewis’s book also points to the important overlap between native foodways and pioneer survival: rose hips provided crucial vitamin C, for example, and berries might be dried by the “Indian” method (in the sun, then stored in flour sacks) to last the winter. Pioneers modified their traditional jelly and preserves recipes to use these new ingredients. The Fort Chipewyan Historical Society’s book, <em>Fort Chipewyan Traditional Cookery</em>, similarly suggests interplay between indigenous and settler food traditions, as in the recipe for “Beaver and Sauerkraut.” Lewis’s hints on snowshoeing, preparing Russian plaster, and killing head lice, as well as the illustrations and anecdotes that introduce some of the recipes, bring the area’s rich history to life. Lewis also drew the advertisements for the book, which include an ad for Overwaitea, at the time a B.C.-owned and -operated business that had offered “Heap Good Medicine for Housewife” since 1915. The first edition was reprinted by the Quesnel & District Museum in 1995.
