A calendar stuck in one of its leaves suggests it might have been published as early as 1936. Elizabeth Driver estimates a date during World War II, based on “Help Win the War” coloured plates pasted on the cover of some copies; these suggest that the book was sold by the Imperial Order of the Daughters of the Empire to help the war effort (Culinary 1067). The presence of “Good / 1941.” next to a recipe for home-canned pumpkin implies a date before 1941. An attempt to date the book by an advertisement referencing G.F. Olivier & Co’s twenty-six years of candy-making experience was not successful. Regardless, we know that this cookbook was produced by Pats Parker, editor of CJCJ’s Women’s Program. The University of Alberta’s copy is stamped with the name and address of Mrs. H. Dofka, who lived in Edmonton with her husband Henry at 9613-110 Ave (Henderson’s ... Edmonton). She used this book actively, marking many pages with ticks and x’s. She also wrote an index of the best recipes (along with their page numbers), pasted in additional recipes, and tucked advertisements and coupons throughout. The book illustrates the recurring trend that recipes seem to be most often consulted for baking: desserts could be finicky and needed precise recipes, and they were an easy opportunity to try a new dish without risking a ruined meal. The Crisco ad with Hebrew script is curious: it points to the brand’s appeal to a multicultural society, particularly as Crisco was free of both pork and dairy products. The book also features an ad for Locke’s Permanent Wave Shoppe, declaring: “If your cake is a failure you can throw it out BUT You can’t discard a poor Permanent.” The ad notes that Pats Parker’s hair was styled at Locke’s. Interned Japanese Canadians and German prisoners of war helped harvest the beets during World War II (Glenbow, “Alberta”), while First Nations peoples also contributed substantially to the workforce (Laliberte). Refineries for cane sugar in Vancouver and for sugar beets in Winnipeg and Southern Alberta employed hundreds. Although the B.C. Sugar Refinery Co. purchased the Manitoba Sugar Company in 1955, as well as the Alberta Sugar Company (Canadian Sugar Institute), the company produced separate cookbooks for each province. The recipes are essentially identical, but the calendars tracking the availability of different fruits and vegetables show subtle differences in the growing seasons. Her views, advocating unprocessed food and vitamin supplementation, were often controversial (Carstairs; McBean and Speckmann 1076). This textbook was written for high school students and recommended for the Alberta curriculum from 1946 to 1963. Its inscription—“16 Mar 50, Miss E. A. Hassie, g Ed”—suggests it was used by an education student. The contents reflect an obsession with vitamins, including the now-defunct vitamin P (citrin). The healthful properties of vitamins were first observed in the 1910s. By 1921, scientists had identified vitamins A, B, and C, and by 1940 they had a list of over forty; books, articles, and advertisements extolled their importance to readers (Apple 4). Industrial success, athletic prowess, and physical and social conformity (“healthiest people have the most fun”) are the ideals in this textbook. In addition to the “Touchdown for Wheat Germ” case study, the book recounts the (probably apocryphal) tale of Ellen B., who reversed the greying of her hair by taking B-complex vitamins. Endorsing food “laboratories” in both urban and rural schools, the book broke activities into precise and prescriptive steps, to be conducted with as little extraneous movement as possible. Other diagrams and instructions prescribed ideal kitchen arrangements, and were likely influenced by the motion analysis studies of Christine Frederick, Lillian Gilbreth, and Mary Pattison (“Social Change”). These home economists, borrowing from the scientific management techniques of the factory, deconstructed the movements of household work in an attempt to increase labour efficiency. Though meant to be an elementary text, the illustrations show children in adult circumstances, suggesting a strict training for their future roles. The illustration of an invalid tray also demonstrates an early American version of the drinking straw. Title A name given to the resource The Jell-O Girl at Lake Louise Description An account of the resource First introduced in the United States in 1897, Jell-O initially struggled to find a market, so in 1904, the company introduced the “Jell-O Girl.” She was based on four-year-old Elizabeth King, the daughter of one of the advertising agency’s artists, and her image appeared in ads, booklets, billboards, and package inserts (Wyman 16–18). This insert belongs to a North American series, in which the Jell-O girl also visits Niagara Falls, Quebec, Ottawa, the Hudson, Mammoth Cave, Lookout Mountain, the Grand Canyon, the Spanish Mission at Capistrano, Catalina Island, Yosemite, and the Pueblo in Taos. On her other travels, the Jell-O girl saw India, China, Romania, Italy and Belgium, among other countries. She was accompanied on her trip to Lake Louise by her mother and her pet parrot, Polly. The Military Chapter of Calgary was formed in 1914 (Glenbow, “IODE”). Likely published around 1927 (Driver 1054), this cookbook includes such notable recipes as “Ham Funeral,” making a ghoulish use of leftovers, and “Marmalade and Vermicelli Pudding,” perhaps adapted from the popular Indian dish. Prohibition ended in 1924 in Alberta, making the recipes for beetroot and parsnip wines an acceptable addition to the repertoire. Like many cookbooks, this I.O.D.E. volume opens with a poem. Its last two lines are frequently repeated in community cookbooks: We may live without poetry, music and art We may live without conscience and live without heart; We may live without friends, we may live without books— But civilized man cannot live without cooks. Title A name given to the resource Casseroles and Economical Meat Dishes Description An account of the resource Capitalizing on the casserole craze of the 1940s and '50s, this publication from the Vancouver Province was one of a series of eight booklets, perhaps available by order to the newspaper’s readers. Allowing the cook to “stretch” a small quantity of meat or use cheaper or leftover meats, casseroles were an economical choice for the kitchen. This book, notably, includes a recipe for a “Ham and Pineapple Upside-Down Cake,” not a cake at all, but a casserole based on the fad for upside-down cake. The booklet’s publication date can be estimated from the newspaper facsimile in the inside cover, which shows an issue from the Province’s fifty-second year. As the paper was founded in 1898, the cookbook can be traced to around 1950. This book belonged to a Saskatchewan native who moved to Vancouver in the 1940s. Cookbooks and home economics manuals, including this volume (used as a high school textbook from 1964 to 1978 [“Alberta School”]), contained graphs highlighting ideal heights and weights for growing children, as well as caloric intakes and nutritional breakdowns. Similarly, standardization in food grading, which in Canada began in the first decades of the twentieth century, is evident here in the explanation of egg quality. This book also highlights the practice of breaking down and restructuring work patterns to optimize efficiency, a technique borrowed from the industrial “scientific management” and applied to the household by home economists such as Christine Frederick and Lillian Gilbreth (wife of industrialist Frank Gilbreth) in the United States. The section on “looking attractive in the kitchen” stressed that young women could not forget the importance of appearance, too: cooking, even at home, is a performance.
