The cover shows a housewife focusing on key cooking goals, not unlike a military strategist. The foreword appeals to Prairie women’s resourcefulness, noting that “The pioneer spirit that is your Western inheritance will see your families well nourished and happy no matter what the future holds.” Encouraging wartime aphorisms, such as “Saving bones is a terrible chore, but better than the War at your door,” run along the bottom of the pages. Many of the recipes are “stretchers,” blending meat with breadcrumbs, potatoes, or other extenders, and some dessert recipes replace rationed butter with shortening, while others call for corn syrup or saccharin instead of sugar. Saccharin, first invented in the late nineteenth century but called into regular service as a household sweetener during the wars, was banned in Canada in 1977, after scientists discovered a link to bladder cancer (Canwest). Soyhart, also mentioned in this book, is a soy-based spread used as a substitute for peanut butter (“The Doctor’s Voice”). An ad for Eaton’s specifically celebrates “Soldiers of the Kitchen Front,” the women whose knowledge of nutrition and food preparation would help them nourish their families and keep up morale, while also conserving vital foods to support the soldiers’ victory overseas. Other advertisements, such as that for McGavin’s bread, instructed housewives on the fundamentals of nutrition. The company used Canada’s first Official Food Rules as a guide; these rules emerged in July 1942 as a response to the perceived need to maintain health during the strictures of wartime rationing (see Mosby). “Canada Approved” bread, available since 1942 and specifically endorsed in Canada’s Food Rules, refers to flour that is milled in such a way as to retain B vitamins (“Canada Approved Bread”). While the United States and Britain encouraged fortification of foods, the federal government’s Nutrition Services Division and the Canadian Council on Nutrition instead advocated for this alternative milling technique (Mosby 421). Vitamins are a recurring concern in the book, which exhorts the consumption of pork for its vitamin B content and notes the importance of “vitamin G,” now known as riboflavin. The book also gives instructions for how to clarify and deflavourize fat and use animal fats in place of butter or shortening, as well as advice for “stretching” small quantities of meat. It also includes a recipe for a “Supper Dish” from Mrs. A.P. McNab, the Lieutenant Governor’s wife. Title A name given to the resource Five Roses Cook Book Description An account of the resource The Lake of the Woods Milling Company, which produced Five Roses flour, was founded in 1887 in Quebec, but the company proudly celebrated its grain, “from the sun-flooded prairie lands of Western Canada.” The first edition of this book was published in 1913; this version, with its colour plates, is from 1915. Multiple printings and editions in both French and English ensured that the book, distributed for free, was available in nearly a million Canadian homes. Though belied by the handsome colour lithographs and aggressive exhortation to “Remember the Brand,” testimonials and contributed recipes gave the book the feel of the already well-established community cookbook. As Elizabeth Driver explains, such “participatory advertising cookbooks” created “a national repertoire of recipes, which was then disseminated to the population at large through the company’s marketing channels” (“Cookbooks as Primary” 266). The string to hang on a kitchen nail and this copy’s messy annotations (including adding eggs back into an eggless recipe) speak to its human uses. The book also celebrates the flour’s purported “hygienic” quality, as the Victorian emphasis on cleanliness evolved into early twentieth-century germ consciousness. Five Roses grain was supposedly more sanitary and kept longer, as it was “cleaned, scoured, ground gradually by modern process, bolted many times through silk, packed automatically into absolutely new full-weight bags and barrels.” The book declared, “Five Roses comes to particular housewives immaculate, untouched by human hands. Nanci Langford’s Politics, Pitchforks and Pickle Jars notes that the first UFWA cookbook was produced in 1928 from recipes donated by members from across the province (xiv); with eight subsequent editions and many more printings, the book eventually sold over 125,000 copies (Driver, Culinary 1055-56). The foreword, by Mrs. Vera MacDonald of the Department of Agriculture’s Extension program, was new to this revised fifth edition. It refers to the housewife as an “artist, for the result of her work is a symphony of life in which all parts of her body, furnished with the foods needed for their functions, play together to produce the harmonious crescendo of ‘an abundant life.’” MacDonald also declares that “For the symphony of ‘Healthful Eating’ learn Canada’s Food Rules and, using them as a guide, serve well balanced meals every day.” This book is notable for including recipes from a variety of ethnic groups; it also contains multiple recipes for date squares, listed under such varied names as “Health Food” and “Matrimonial Cake.” Another noteworthy recipe is “Mock Chicken Salad,” made with diced cooked pork, readily available on Alberta farms. In this case, the full-page advertisement for the telephone demonstrates the early incentives behind rural telephone installation; another advertisement promoted pumps that could turn well water into running water in the home. With regard to the recipes, most have only minimal instructions, a reminder that basic ingredient lists were more important than detailed directions when, for example, every stove was different. Folk measuring systems also hung on, particularly for butter, the firm texture of which made it most logical to dispense with cups and instead use analogies like “the size of an egg.” Perhaps unsurprisingly, this book was modeled after the United Farm Women of Alberta’s cookbook, published in 1928. The UFWM, however, was founded first: the Manitoba Grain Growers’ Association allowed females as associate members in 1912 (Goldsborough). They officially became the United Farm Women of Manitoba in 1918 (Bumstead 268). The owner of this copy also inserted advertising recipes—featuring in this case Nutty Club Gum Drops and Baker’s Chocolate—which she fastened to the book with a pin, a clever alternative to today’s staples. Title A name given to the resource Souvenir of Fiftieth Anniversary: First Continental Train, June 28th 1886-1936 Description An account of the resource This item was produced for the fiftieth anniversary of Canada’s first transcontinental passenger train journey. Though the last spike was driven on 7 November 1885, the winter and ongoing repairs to the track delayed the first cross-Canada trip. The train finally left Montreal’s Dalhousie Station on 28 June 1886 and arrived at Port Moody on 4 July 1886. It consisted of a locomotive, two baggage cars, one mail car, one second-class coach, two immigrant sleepers, two first-class coaches, two sleeping cars, and a diner (“Canadian Pacific Railway”). The fiftieth anniversary was celebrated with a surge of publicity, including the launch of new “Jubilee” trains and celebrations as the original locomotive made stops across the country (see “C.P.R. Takes Over” and “Celebrations Planned”). A commemorative fruitcake was prepared as well, perhaps for the celebrations in Montreal: fruitcake was a common treat at special events like weddings and was sometimes kept and eaten at significant anniversaries. Showing remarkable resilience to age, the nuts, dried fruit, and icing are still intact after over 75 years, wrapped in an early form of cellophane. Title A name given to the resource Blue Ribbon Cook Book Description An account of the resource The Blue Ribbon Company was established by George Frederick and John Galt in Winnipeg around 1897; the cousins had already established a wholesale grocery business in 1882 (Driver, Culinary 928). Though the copyright for this book was apparently entered in 1905, the actual date of issue for this edition was probably around 1936. Women might have distributed the tear-out coupons to their friends and neighbours, illustrating how the company tapped into an extant community and brought them together around a common product. As in many company cookbooks, this publication includes a section for women to add their own recipes, which they usually did in messy handwriting stocked with their own abbreviations. The book also includes a section on invalid cookery, commonplace in earlier household tomes. But while older recipe books might also include home remedies for serious illnesses, late-nineteenth- and twentieth-century publications usually deferred to doctors for such medicinal treatments. Still, their invalid cookery recipes reinforced women’s continued importance as healers through food.
