Title A name given to the resource Cook Book Description An account of the resource The Girl Guides were founded in Britain in 1909, with the first Canadian unit formed in St. Catharines, Ontario, in 1910. By 1912, there were units in every province (Girl Guides, “History”). The Wascana Girl Guides were based out of Regina, the same city that boasted the Girl Guide leader who, in 1927, first baked and packaged cookies for her guides to sell as a fundraiser (Girl Guides, “Cookie History”). This book is particularly notable for its charming, hand-drawn illustrations, as featured on the cover, as well as a recipe for “Elvis Cake,” which helps us to date the book to the 1960s. Indeed, the cover is inscribed with “Strong / 66,” indicating a possible year of publication; it is certainly newer than 1961, since an advertisement for “Queen City Glass” includes that as its date of establishment. The book is “dedicated to the members of the Wascana Girl Guides—8th Company, Regina, Sask.” and lists their names. Title A name given to the resource Cook Book Description An account of the resource This sixteen-page cookbook comes from Mayfair United Church in Saskatoon, which still exists today. It is clearly compiled by a predominantly English community: recipe donors have names such as Goodwin, Fraser, and Swift, and a number of the recipes are traditionally English, such as “Seed Loaf” made with caraway seeds; “Beefsteak Cake” made with raisins, nutmeg, and molasses; “Carrot Pudding”; and “Christmas Pudding.” Many community cookbooks contained “recipes” for friendship or a peaceful marriage or, as in this case, “How to Cook a Husband.” In terms of food, community cookbooks tended to emphasize baking, particularly of squares and cookies, over cooking recipes, perhaps because of its social aspect. Many of these recipes also used special ingredients, such as canned pineapple, candied cherries, and coconut, that were novelty items in the first half of the twentieth century; women would have relied on one another’s experience to incorporate these new items into their cooking. Title A name given to the resource Cook to Win Description An account of the resource Another example of a wartime cookbook, Cook to Win was produced by the Good Cheer Club of Wesley United Church in Calgary. The cover shows a housewife focusing on key cooking goals, not unlike a military strategist. The foreword appeals to Prairie women’s resourcefulness, noting that “The pioneer spirit that is your Western inheritance will see your families well nourished and happy no matter what the future holds.” Encouraging wartime aphorisms, such as “Saving bones is a terrible chore, but better than the War at your door,” run along the bottom of the pages. Many of the recipes are “stretchers,” blending meat with breadcrumbs, potatoes, or other extenders, and some dessert recipes replace rationed butter with shortening, while others call for corn syrup or saccharin instead of sugar. Saccharin, first invented in the late nineteenth century but called into regular service as a household sweetener during the wars, was banned in Canada in 1977, after scientists discovered a link to bladder cancer (Canwest). Soyhart, also mentioned in this book, is a soy-based spread used as a substitute for peanut butter (“The Doctor’s Voice”). Cook to Win includes recipes from Princess Alice and Nellie McClung, as well as the wife of Conservative leader John Bracken. Title A name given to the resource Cooking the Co-op Way Description An account of the resource The British Women’s Co-operative Guild was first founded in 1883, and it became a model for the retail co-operatives that were founded across the Prairie provinces in the early twentieth century. These retail co-ops joined to form provincial wholesale co-operatives in 1928, which eventually merged to form the Federated Co-operatives Limited, which still have stores across rural Western Canada. The preface to this cookbook notes that “While the guilds from other countries are mostly connected with the consumer movement, Canadian guildswomen, particularly on the Prairies, are interested and active in all phases of the co-operative movement—marketing, consumer, financial, and service.” In keeping with this active spirit, the Co-operative Women’s Guild of Outlook, Saskatchewan, compiled the first Saskatchewan Co-op Cookbook in 1946. It was revised by popular request in 1952 and underwent five reprints. The Manitoba Women’s Co-operative Guild similarly selected a cookbook for its first major project. It too, was successful, and Cooking the Co-op Way was compiled from these earlier books, “using many of the recipes which are family treasures and adding many different ones, in the hope that it will be of even more assistance to the modern homemaker.” In addition to generic North American classics like “Lemon Chiffon Pie,” “Ham Steaks,” “Celery Pinwheels,” and “Potato Salad,” this book follows a trend from the period in including “Foods from other Lands” (albeit heavily Westernized and even bowdlerized), which might tempt the bored family cook. This was a process of “mainstreaming the foreign foods until they were no longer considered dangerously foreign yet still retained enough of the exotic to make experimenting with them worthwhile” (Iacovetta, Korinek, and Epp 20–21). The cookbook also includes basic nutritional information, table service tips, weights and measures, and substitutions in the case of missing ingredients. Tucked between the pages is a newspaper clipping with various desserts recipes, as well as another for “Chewy Raisin Squares”; these speak to the cookbook’s place as a go-to kitchen reference, and to the tenacity of these ephemeral articles. Title A name given to the resource Country Cook Book: With Special Recipes for Making Cookies and an Improved Method of Making Sugar-Beet Syrup Description An account of the resource Much about Mrs. Mary Berkner’s life is elusive. A Saskatchewan farm woman, perhaps with Hungarian roots, Berkner’s goal was to encourage Depression-era women to produce delicious food while saving money and driving down the price of sugar—all through the use of homemade sugar beet syrup. Her book includes correspondence from Mrs. Ethel B. Rutter, head of the University of Saskatchewan’s school of household science, and Dr. Frank Hoffman, editor of the Az Otthon Hungarian monthly, who encouraged her to publish the recipes. The recipes, named by and for Berkner and her daughters, creatively employ sugar beets in jams, coffee, and baking. Berkner adds that the sugar beet pulp, mixed with crushed oats or shorts (a by-product of milling) and mashed potatoes, makes excellent chicken feed. Whether the book’s price was twenty-five cents (as indicated on the cover) or one dollar (as indicated in the foreword), its advice is an invaluable measure of a Prairie woman’s ingenuity and enterprise.
