Title A name given to the resource Recipes for Young Adults Description An account of the resource Sugar beets were first grown in Western Canada around the turn of the twentieth century and were soon a popular crop in Alberta and Manitoba. Interned Japanese Canadians and German prisoners of war helped harvest the beets during World War II (Glenbow, “Alberta”), while First Nations peoples also contributed substantially to the workforce (Laliberte). Refineries for cane sugar in Vancouver and for sugar beets in Winnipeg and Southern Alberta employed hundreds. Although the B.C. Sugar Refinery Co. purchased the Manitoba Sugar Company in 1955, as well as the Alberta Sugar Company (Canadian Sugar Institute), the company produced separate cookbooks for each province. The recipes are essentially identical, but the calendars tracking the availability of different fruits and vegetables show subtle differences in the growing seasons. The book was meant as a home economics text, with recipes selected by a committee of home economics teachers. Polly Potato, whose attractive but oversized head must have been modelled on the titular tuber, offered information about Manitoba potato varieties, nutrition, buying, and storage. The book, likely produced by mimeograph, also includes recipes for “Curried Potatoes,” “Escalloped Potatoes,” “Hungarian Potato Soup,” and “Potato Bon Bons” (which combined mashed potatoes with icing sugar). The recipes for “Chocolate Snowballs” and “Potato Doughnuts” have been modified to suit the cook; in the case of the grease-stained doughnut page, the recipe has been doubled. Such annotations speak to the interactive nature of cookbooks, which are constantly edited and refined to suit the reader’s tastes, experiences, and needs. A rare book dealer site also indicates that Polly had a partner in Potato Pete, who says “Buy me wisely, store me carefully, cook me skilfully & I’m Sure to Please” (“Potatoes”). Magazines began employing photo editors to create innovative and eye-catching layouts, such as the ones seen here. To consider the changing aesthetic of photojournalism, compare Life’s photographs and layout with the illustrated news report from 1868 on the <a href="https://omeka.library.ualberta.ca/exhibits/show/photograpies/item/3049">Trial of Patrick J. Whelan</a>. The <a href="https://omeka.library.ualberta.ca/exhibits/show/photograpies/circulate-knowledge/1900-to-1969">documentary photographs</a> published in Life follow a tradition of social documentary photography that emerged in the late-nineteenth century with photographers <a href="https://www.npr.org/templates/story/story.php?storyId=91981589" target="_blank" rel="noopener">Jacob Riis</a> and <a href="http://100photos.time.com/photos/lewis-hine-cotton-mill-worker" target="_blank" rel="noopener">Lewis Hine</a>. Cookbooks and home economics manuals, including this volume (used as a high school textbook from 1964 to 1978 [“Alberta School”]), contained graphs highlighting ideal heights and weights for growing children, as well as caloric intakes and nutritional breakdowns. Similarly, standardization in food grading, which in Canada began in the first decades of the twentieth century, is evident here in the explanation of egg quality. This book also highlights the practice of breaking down and restructuring work patterns to optimize efficiency, a technique borrowed from the industrial “scientific management” and applied to the household by home economists such as Christine Frederick and Lillian Gilbreth (wife of industrialist Frank Gilbreth) in the United States. The section on “looking attractive in the kitchen” stressed that young women could not forget the importance of appearance, too: cooking, even at home, is a performance.
