As S.M. Selchen wrote in the Canadian Jewish Chronicle in 1954, “This tiny Jewish island among a non-Jewish populace of over 20,000 is exceptional material for the study of Jewish stubbornness and Jewish will for survival.” He noted Medicine Hat’s popular Jewish mayor, magistrate, and librarian. In 1947, when this cookbook was published, Medicine Hat’s population was only 13,600 (“Population Data”), but the Jewish community was already well established, as evidenced by its Hadassah organization, a charitable women’s group. Similar branches in Edmonton and Winnipeg also published cookbooks. This book includes several distinctively Jewish notes, such as unleavened holiday foods, “Gefillte Fish,” and an advertisement for kosher sausage. The chairs are right for they’re just your height, The bibs are of pink or blue, And smiling up from each plate and cup Are the nursery pictures too. Railway travel might be a rare occasion for a child to dine out, and food was one of the glamorous highlights of a transcontinental railway trip for adults as well. This glamour had a Prairie connection: by the 1940s, both Canadian Pacific Railway and Canadian National Railway were using Medalta tableware, produced by Medalta Potteries in Medicine Hat (“Western Canadian History”). But dining-car fare was too expensive for many travellers, and restaurants soon sprang up at divisional points along the tracks, where passengers could hop off and swallow a quick meal (Duncan 117). Title A name given to the resource The Key to Prosperity in the Bread Basket of the World Description An account of the resource The Canadian Northern Railway grew swiftly from its creation in 1899 to its nationalization in 1918. In the same vein as the Grand Trunk’s Bread: Terse Stories of Success, the company published The Key to Prosperity in the Bread Basket of the World. “The Bread Basket of the World” was a common slogan among railway and land development companies promoting the West, evoking the Prairies’ potential for bountiful harvests. This potential was realized when the land was seeded with Red Fife wheat, the first variety to flourish in Canada (Musgrave 146). Marquis wheat, developed in 1909 and exemplifying excellent yield, high-quality milling, and a shorter growing period of under one hundred days, was even more successful; by 1920 it was grown on about nine-tenths of total Prairie wheat acreage (Dexter 265). Intended for an American readership, this brochure proclaims harvests of forty bushels per acre, declaring that “Canada is the only Country that has proved good enough for the American to emigrate to.” The brochure promises that immigrants would find no wild frontier—only civilization—and might hardly realize that they were in a different nation. In addition to social benefits, the booklet noted that the soil and weather were well suited for wheat, oats, barley, speltz (spelt), and peas, as well as grasses and fodders, with enough water for dairy farming. Root vegetables, potatoes, legumes, and small fruits were possible as well. Title A name given to the resource Souvenir of Fiftieth Anniversary: First Continental Train, June 28th 1886-1936 Description An account of the resource This item was produced for the fiftieth anniversary of Canada’s first transcontinental passenger train journey. Though the last spike was driven on 7 November 1885, the winter and ongoing repairs to the track delayed the first cross-Canada trip. The train finally left Montreal’s Dalhousie Station on 28 June 1886 and arrived at Port Moody on 4 July 1886. It consisted of a locomotive, two baggage cars, one mail car, one second-class coach, two immigrant sleepers, two first-class coaches, two sleeping cars, and a diner (“Canadian Pacific Railway”). The fiftieth anniversary was celebrated with a surge of publicity, including the launch of new “Jubilee” trains and celebrations as the original locomotive made stops across the country (see “C.P.R. Takes Over” and “Celebrations Planned”). A commemorative fruitcake was prepared as well, perhaps for the celebrations in Montreal: fruitcake was a common treat at special events like weddings and was sometimes kept and eaten at significant anniversaries. Showing remarkable resilience to age, the nuts, dried fruit, and icing are still intact after over 75 years, wrapped in an early form of cellophane. Winter Wheat and Alfalfa Farms in Southern Alberta Description An account of the resource This attractive brochure emphasized the CPR’s three-million–acre irrigation block, located east of Calgary. Begun in the 1890s during a period of dry years, the scheme involved a series of canals that brought water to farms in the region, acting as an insurance against the weather (see CPR, Irrigation Project). Contrasting the vast potential of land-owning rural life with the oppression of renting a farm or laboring in the city, the brochure encouraged settlers to find their independence as farmers. Though the CPR professed that its principal intention was to raise funds by increasing railway traffic, the sale of the land, the cost of participating in the irrigation scheme, and the opportunity to purchase services such as breaking and fencing no doubt brought in a tidy profit as well. The brochure’s final pages offer a useful snapshot of food prices in the Calgary area around 1909, with soda biscuits selling at nine cents per pound, coffee at twenty-five cents per pound, and tinned beef at twenty cents per pound or thirty-five cents for two pounds. Although this book is not dated, the “freezing” addition is new to the 1950s editions, mirroring the growing popularity of gas-powered refrigerators and freezers in the home. This copy belonged to Calgary District Home Economist Mrs. S.R. Leavitt. The book emphasizes sterilization in home canning, probably because of women’s decreased experience in canning and increased consciousness of risk; the author insists, for example, on using oven controls for proper high-temperature processing, and also includes several notes waiving all liability for “failure or spoilage.” Home Canning and Freezing includes common home-canning recipes, such as chow chow and piccalilli. In addition to distributing recipe books, the gas companies’ home service departments also offered tips on menu planning and kitchen design, housecalls for new gas appliances, and a telephone service to answer cooking questions. They also ran cooking schools and programs for youth and club groups. Title A name given to the resource A Little Cook-Book for a Little Girl Description An account of the resource Although this is an American cookbook, originating as a semi-literary series for Good Housekeeping, this particular copy belonged to Albertan Lilian Leversedge (1913–2001), perhaps the daughter of Anglican minister Walter Leversedge and his wife Kate Ramsey (Hills of Hope 121–27). Notably, the candy and dessert pages are well worn, while the recipe for broiled sardines is untouched. The handwritten recipe for maple fudge (containing no maple syrup, sugar, or extract) on the back page displays Leversedge’s juvenile hand, as well as the tendency for written-in recipes to be for desserts. The book includes early nods to prepared foods, including boxed gelatine and Baker’s brand chocolate, while “butter the size of a hickory nut” and “10 cents’ worth” of almonds might have meant little on the Canadian Prairies.
