Title A name given to the resource Lantern Slide Description An account of the resource <a href="https://www.whyte.org/illuminatinglanternslides" target="_blank" rel="noopener">Lantern slides</a>, which allowed the image on a glass plate to be projected with light onto a wall or screen, represent one way that knowledge circulated through photographs. Though lantern slides with painted imagery have a long history that predates the discovery of photography, travelling lectures based on photographic lantern slides became increasingly commonplace in the nineteenth and early-twentieth century. Lantern slides would eventually be supplanted by <a href="https://omeka.library.ualberta.ca/exhibits/show/photograpies/item/3159">film slides</a>. This hand-coloured slide is made from a photograph taken by Western Canadian journalist Miriam Green Ellis. The cracks that mark the surface of the glass plate call attention to the fragility of lantern slides. The book’s title page explains that its pictures were “drawn, engraved and coloured from the natural subjects.” Harris’s hand-coloured engravings are remarkable, and he went on to become known as a colour theorist after publishing a <a href="https://brightonmuseums.org.uk/discover/2013/07/04/rare-copy-of-moses-harriss-natural-system-of-colours-on-display-at-the-royal-pavilion/" target="_blank" rel="noopener">treatise on colour</a> that also features hand-coloured plates. The frontispiece (the image facing the title page) features a portrait of a man, presumably representing Harris himself, offering us a tray of specimens with his left hand while pointing into a wooded landscape with his right hand. When we follow his gesture, we see the same man engaged in the labour of collecting moths and butterflies. By selecting this image as the frontispiece, Harris seems to emphasize the presence of an expert as a guide. In contrast, photographic collections of scientific specimens often have the effect of effacing the presence of their makers. For example, compare The Aurelian to an entomological album from 1875, <a href="https://omeka.library.ualberta.ca/exhibits/show/photograpies/item/3156">Anatomical Illustrations of the Bee</a>.  The copy of The Aurelian housed in Bruce Peel Special Collections and featured here is a composite of pages from the first and second editions, published in 1766 and 1778, respectively, and brought together by a previous owner. Subsequent editions were published into the nineteenth century, as can be seen from this <a href="https://archive.org/details/Aurelian00Harr/page/n5/mode/2up" target="_blank" rel="noopener">full scan of an edition of 1840</a>. Title A name given to the resource Recettes des femmes de St. Joseph Description An account of the resource Community cookbooks were not generally a francophone practice (Driver, “Cookbooks” 410). Even the promising-sounding Recettes des Femmes de St. Joseph, from a francophone community in Manitoba, contains recipes written entirely in English. Although most recipes were contributed by women with French names—Mrs. Annette Lavallee, Mrs. Rene Perron, Mrs. Elouise Delorme, for example—none are traditionally French-Canadian. By contrast, the collection includes “Chinese-Fried Rice,” “Chop Suey,” and “Chili con Carne.” The section on “Supper Quantity Cooking,” moreover, which reflects the role of homemade food at community and church gatherings, does not contain any particularly French-Canadian dishes. Interestingly, rather than use a local printer, the group elected to have their book published by the Women’s Clubs Publishing Co. in Chicago, which would also publish books from Wesleyville, Newfoundland and Elmira, Ontario, as well as communities across the United States. The notion of sending a local manuscript to such community cookbook businesses began in the 1950s; other companies offering this service included North American Press (in Kansas City) and L. Rasmussen Co. (in Winnipeg) (Driver, “Home Cooks” 58). The fact that this book was published in the U.S. by an English-language publisher may explain the absence of accents in the women’s names. Title A name given to the resource Country Cook Book: With Special Recipes for Making Cookies and an Improved Method of Making Sugar-Beet Syrup Description An account of the resource Much about Mrs. Mary Berkner’s life is elusive. A Saskatchewan farm woman, perhaps with Hungarian roots, Berkner’s goal was to encourage Depression-era women to produce delicious food while saving money and driving down the price of sugar—all through the use of homemade sugar beet syrup. Her book includes correspondence from Mrs. Ethel B. Rutter, head of the University of Saskatchewan’s school of household science, and Dr. Frank Hoffman, editor of the Az Otthon Hungarian monthly, who encouraged her to publish the recipes. The recipes, named by and for Berkner and her daughters, creatively employ sugar beets in jams, coffee, and baking. Berkner adds that the sugar beet pulp, mixed with crushed oats or shorts (a by-product of milling) and mashed potatoes, makes excellent chicken feed. Whether the book’s price was twenty-five cents (as indicated on the cover) or one dollar (as indicated in the foreword), its advice is an invaluable measure of a Prairie woman’s ingenuity and enterprise. Title A name given to the resource Chinese Restaurant Ephemera Description An account of the resource The 1970s dim sum ticket from the My Lai Garden restaurant, in contrast to the Golden City menu, features many clearly Cantonese dishes, including water chestnut cake, egg tarts, green peppers stuffed with shrimp paste, and pig’s liver rice crepes; the latter dish, though trendy in the period, has now died out. Shrimp dumplings, the first item on the list, are a characteristic feature of dim sum: difficult to make, they are the standard by which to measure the dim sum master’s skill. Unusually, this dim sum ticket is for take-out, an unconventional way of enjoying this sociable meal. Perhaps the restaurant found an effective way to deal with long lineups? Ephemera such as menus, as well as oral histories, are the primary records of Chinese food on the Prairies. Few Chinese cooks published their recipes. Instead, they were passed down from one generation to the next, and generally written only for family use, like the handwritten recipes from Janice Wong, whose parents operated two Chinese restaurants in Prince Albert, Saskatchewan: Wings Café and The Lotus.
